Diet foods
are adapted to special nutritional requirements. In the case of diabetics, this is the reduction or replacement of glucose in food. Diet nectars are reduced in calories and/or sugar, for this reason they are not just drunk by the figure conscious, but are also good for diabetics.

Direct juice
Mostly home-grown fruit types are processed into direct juice. Juice is bottled directly after pressing or put into drink tanks for interim storage without previously being condensed into fruit juice concentrate. Thus, direct juice is of a higher grade than nectar or a fruit juice drink.

Juice extraction systems

The label gives the consumer an exact insight into the food. Apart from the generic description (e.g. ‘apple juice’), the ingredients list - in which all the sorts of fruit used are listed, the quantity and the expiry date is also noted. Added contents, e.g. in form of vitamin enrichment or, in the case of fruit nectars and fruit juice beverages, the addition of sugar and water must be marked.

Fruit nectar
The juice of different fruits, such as blackcurrant, sour cherry or banana is not suitable for immediate consumption because of the high fruit acid or fruit pulp content. In this case, the juice is made ready to drink by adding water and sugar - this is called fruit nectar. The minimum fruit content stipulated, depending on the kind of fruit used is about 25-50%. The label answers the question as to how much fruit is found in the individual drink.

Fruit juice
(e.g. apple, orange, pineapple juice) has a fruit content of 100%. Fruit juices contain neither colour nor preservatives. Apple juice is the preferred choice of Germans with a per-capita consumption of approximately 12 litres/year followed by orange, multivitamin and grape juice.

Fruit juice drink
In fruit juice drinks, the fruit only supplies flavour. They are classed as soft drinks alongside carbon-dioxide containing lemonades and carbonated drinks. Apart from small quantities of fruit juice they contain drinking water, natural fruit flavours, sugar and if necessary, acids to help the drink taste better. The minimum fruit content has to be indicated on the label. Depending on the kind of fruit used, it is around 6% to 30%.

Vegetable juice
The best known vegetable juice is tomato juice however the juices of carrots, cucumbers, radishes and beetroot are also valued. Vegetable juices are frequently seasoned by adding salt, milk acid or citric acid and are made to be long-lasting.

Immune system / Immune defence
The immune system helps our body to defend itself against harmful outside and internal influences. It is sufficiently well-known that vitamin C for example supports the immune defence system. However it is not only hot lemon juice that is full of the vitamin. Blackcurrant juice nectar and orange juice are also good sources of vitamins.

Each day
the body needs vital nutrients, in order to remain healthy and efficient. Fruit helps to cover the need for nutrients and it supplies many health-promoting materials such as fibres, flavonoids and polyphenoles. As the combination of the nutrients is particularly advantageous in fruit and vegetables, daily consumption is recommended - ideally five times a day. Apart from fresh fruit and vegetables, fruit and vegetable juices make a good-tasting and convenient alternative.

is the usual energy unit . A male adult requires approximately 2600 kcal. /d. To help estimate the number of calories consumed kilocalories per 100 ml are often indicated, for fruit juices, on the label. In fruit juices, it is the valuable fruit sugar which constitutes the bulk of the kilocalories.

is the most storable form of fruit and vegetable juice. It is predominately in citrus fruits and other exotic fruits which have to cover a great distance for processing that, in the country of cultivation, first the flavour and then a large share of water is extracted. After the passage to Europe, the original juice is restored from the fruit juice concentrate. Thanks to the possibility of producing fruit juice from concentrates, even if the fruit harvest fails in a year for weather-related reasons, high-quality fruit juice is available in sufficient quantity and at reasonable price. Production from fruit juice concentrate is always written on the label. Judged from the aspect of taste however, fruit juice from concentrate always varies according to the concentrate.

Up until the 20th century, fruit juice could be enjoyed only in the harvest months. That changed with the advent of pasteurisation. In the 19th century Louis Pasteur discovered that the fermentation process was stopped after heating meals and drinks for a short time. Freshly bottled fruit juices are therefore heated up for short time at a temperature of around 80 °C. Pasteurised juice supplies us with vitamins and nutrients all the year round.

Multi-vitamin fruit juice
By adding vitamins, multi-vitamin fruit juice is given an additional vitamin kick. One glass of multi-vitamin fruit juice alone covers one third of the daily requirement of essential vitamins. Multi-vitamin fruit juices generally contain ten to twelve different kinds of fruit. It is mostly orange and apple juice which serves as a basis, to which banana pulp or purée, grape juice, maracuja juice, mango juice, papaya juice, pineapple juice or other fruit juices is/are added in completely different quantities.

Orange juice
follows hot on the heels of apple juice, as second to the front runner in Germany. What was once an exotic good, has become an everyday product for all. And this is good, as orange juice, with its high share of vitamins and fruit content, supports the daily balanced diet well. 0.2 litres of orange juice alone is sufficient to cover 90% of the vitamin C requirement. Vitamin B, provitamin A, potassium, calcium and magnesium, juice gets us going.

According to recent scientific analyses, it is flavonoids which above all seem to unleash strong antioxidant effects, contributing to a lowering of the risk of cardiovascular disease.

Spoilt for choice
Today’s consumer is spoilt for choice with the wide assortment of fruit juices or vegetable juices and nectars on offer. In recent years there has been demand for exotic tastes such as pineapple, maracuja, mango and guava alongside traditional juices such as apple, cherry and grape.

Purity requirement
In the same way that the 'Reinheitsgebot’ is the purity requirement governing beer production, the EU fruit juice directive and/or the German fruit juice regulation governs the production of fruit juices. It lays down that juices have to be produced from up to 100% fruit, without the use of colourings or preservatives.

Secondary components from plants
occur in plants in the smallest of quantities and as such, perform the most diverse functions possible (in the body) colouring, enticing and in sending messages. They don’t have a place among the nutrients essential for life however, but have an effect which promotes health.
Polyphenols for example, which occur amongst other things in red grape juice, help to protect against the hardening (calcification) of arteries and heart attacks.

World champion
With fruit juice consumption of 40.5 litres per capita, the Germans are world champions. They are followed by Austria with a per-capita consumption of approx. 37.4 litres, and 30 litres the USA and Switzerland. Fruit juice consumption has risen constantly in recent years in nearly all countries. Germany produces nearly 50% of all fruit juices and nectars manufactured European Union.

Fruit juices are usually produced without adding sugar. Fruit is not able to store enough sugar in years with little sun. In this case the appropriate European Union directive permits the addition of up to 15 grams of sugar per litre of fruit juice. Such corrective sweetening however is the exception. In each case, sweetening must be expressly referred to on the label.
